RECIPE: Quinoa and Chorizo Paella 


I adapted this from some ideas I had in several recipes flicking through the Internet. It’s a great low fat / carb warm ‘salad’ alternative for a working lunch during the winter. I was looking for ways to use quinoa, and I found loads! There may be more recipes in the pipeline on this topic! This would be super easy to make, box, and reheat as a lunch filler for when you’re at work, or for a quick easy tea on the go. 

Ingredients:

  • 1 chorizo sausage (approx 2oz) finely chopped
  • 1 cup quinoa
  • 1 onion diced
  • Sprinkling of parsley
  • 3-4 cups water
  • 5-6 sundries tomatoes, chopped

Place the chorizo and onion in a large pan and cook on a medium heat until the oils bed in to release and the onion softens. Add the quinoa and water plus parsley, leave to simmer till the water is all incorporated. It should take about 15-30 mins. Done: simple! For me this served around 4.
