Recipe: grilled pineapple with cinnamon yoghurt


PineappleMy search for simple low fat desert options continues. Here’s another one I tried recently. I don’t think I got the caramelised pineapple quite right though when I tried it.

Ingredients
Serves: 4

4 (1cm) slices fresh pineapple
5 teaspoons light brown soft sugar
4 tablespoons low fat natural yoghurt
2 teaspoons ground cinnamon
fresh mint

Method
Prep:3min › Cook:8min › Ready in:11min

Turn the grill on to high.

Lay the pineapple slices on a baking tray and grill for 4 minutes.

Turn and sprinkle the other side of each pineapple slice with 1 teaspoon light brown sugar. Grill until the sugar is bubbling and the pineapple is heated through.

Meanwhile, mix the yoghurt with the remaining 1 teaspoon sugar and the cinnamon.

Plate up the pineapple and garnish with a tablespoon of the cinnamon yoghurt and chopped fresh mint.
