(serves 4)
225g noodles
A thumb size piece of ginger, peeled and grated 4 Tbsp soy sauce
3 Tbsp sweet chilli sauce
Juice of 2 limes
1 Tbsp sesame oil
Vegetable oil
400g pork mince
40g sesame seeds
A bunch of spring onions, finely sliced
2 large carrots, peeled, sliced into matchsticks 1 medium chilli, finely sliced.
A small bunch of coriander
Cook preferred noodles as per instructions. In a small bowl stir in the ginger, soy sauce, sweet chilli sauce, lime juice and sesame oil and mix well.
Place a large frying pan over a high heat, add a drizzle of vegetable oil and fry the mince for 10- 15 minutes, until golden, braking it up with a wooden spoon as it cooks, add the soy sauce mixture and fry for another 5 minutes, or until sticky and golden.
Toast the seeds in a small dry pan for 1-2 minutes, or until golden.
Serve on top of noodles with sesame seeds sprinkled.
