(serves 6)
250g pasta of your choice, cooked as per packet instructions
2 cups cooked chicken, shredded
125g button mushrooms, quartered
1 1⁄2 cups frozen peas and corn, thawed
1 cup mayonnaise
250g tub lite sour cream
2 Tbsp lemon juice
Crunchy Topping
50g packet potato chips, slightly crushed
1 cup cheddar cheese, grated
1⁄4 cup parmesan, grated
Preheat oven to 180°C
Lightly grease six 2 cup ovenproof dishes or a deep 12 cup baking dish
In a large bowl, combine all ingredients. Mix well and season to taste.
Spoon into dishes.
Crunchy Topping
In a medium bowl, combine all the ingredients. Sprinkle topping evenly over pasta mixture in dishes.
Bake for 15-20 minutes until tops are crisp and golden.
