Recipe: Chicken pick ’em ups with spicy apricot dipping sauce


Serves: 4
Time to make: 25 mins

Equipment to make pick ’em ups
food processor
non-stick frying pan or stove top grill
measuring spoons
spatula for turning the chicken pick ’em ups
bamboo skewers (optional)

2 boneless chicken breasts, skin removed
1/2 onion
2 slices bread
1 tablespoon Dijon mustard
1 handful fresh basil leaves
fresh 1 handful parsley
1/2 teaspoon salt
1 egg
Equipment to make sauce
small bowl
measuring cup
measuring spoons
small spoon for stirring
1/2 cup apricot jam
2 teaspoons white wine vinegar
2 tablespoons sweet chilli sauce
1 teaspoon Dijon mustard
1 tablespoon tomato sauce

For the pick ’em ups

Step 1 Cut the onion in half and remove the skin from one half.

Step 2 Place the onion, chicken, bread, mustard, salt, basil, parsley and egg in the processor and pulse until minced.

Step 3 Heat the pan or grill. Use a spoon to scoop around a spoonful of mixture and drop into the pan or onto a grill plate or barbecue. Flatten to form small patties.

Step 4 Cook until browned then turn and continue cooking until the patties are done, approximately 4 minutes each side.

Step 5 Poke a skewer into the side of each patty and serve with dipping sauce.

For the sauce

Step 6 Mix all the ingredients in a small bowl and serve as a dip for kebabs and meatballs.
